Comfort Food: Baked BreakfasT Oats

One of my favourite breakfast at any time of the year are these delicious baked oats. Not only are they tasty and full of good fibre for your gut, they are also great for busy people and don't cost the earth.
I love the combination of fruit and oats with the crunchy seeds and a dollop of plant yogurt. If you feel you need a bit of extra sweetness, simply drizzle on a little maple syrup. Divine!
You can make a batch of this and freeze it in portions, so it's great for meal prep too.

Baked Breakfast Oats (4 portions)
Ingredients:
200g oats
250ml plant milk (I love almond or soya for this)
250ml hot water
1 tsp vanilla extract
250g frozen berries (I like a summer berry mix)
1 large ripe banana, mashed
a handful of mixed seeds (pumpkin & sunflower seeds give a good crunch)
Method:
Preheat the oven to 180C (fan).
In an oven-proof dish combine the frozen berries with the mashed banana and spread out evenly on the bottom of the dish.
Into a bowl add the oats, vanilla extract, plant milk and hot water - mix to combine.
Now spread the oat mix evenly on top of the berry/banana layer and sprinkle with the mixed seeds.
Bake in the oven for approximately 35 to 40 minutes until golden.
Remove from the oven and leave to settle for 5 minutes before serving with a dollop of plant yogurt and a drizzle of maple syrup (optional).
