As Autumn arrives in the UK, it brings a gorgeous amount of vibrant, seasonal produce perfect for your plant-based meals. Some of my personal stars of the season include pumpkins, butternut squash, and parsnips as well as delicious crisp apples and earthy mushrooms. All of these ingredients are not only nutritious but also super versatile and will allow you to create comforting dishes that celebrate the flavours of autumn.
Talking of mushrooms, did you know that mushrooms are a good source of vitamin D? In a study on bioavailability of vitamin D, healthy adults were given either a 2000 IU vitamin D supplement or mushrooms over a period of three months and both had an equally positive effect on raising and maintaining the blood levels of this crucial vitamin.
But let's get back to eating...
For a savoury autumn meal, try roasting butternut squash and combining it with grains like quinoa or barley for a hearty salad. Or why not blend roasted pumpkin with coconut milk and spices like ginger for a creamy, warming soup?
For desserts apples with their natural sweetness make the perfect base for a crumble or for chutneys to go with vegan cheese. Yum!
